 少油鹽多纖維 粽要吃健康

端午佳節將至，桃園市衛生局日前至轄內傳統市場、連鎖超市、量販店及製造工廠抽驗端午應節食品及其配料，共計抽驗42件，其中1件「鹼粽」疑檢出硼酸及其鹽類，為求謹慎，將重新檢驗問題產品，也責令業者將有疑慮產品立即下架回收。

光吃粽子 傷害腸胃

衛生局表示，業者製做鹼粽會使用硼砂，以增加鹼粽的口感及防止粽葉沾黏，但因為硼砂進入人體會轉變為硼酸，連續攝食會在體內累積，食用多量會引起腹痛、腹瀉、嘔吐、頭痛等中毒症狀，也可能對肝、腎或中樞神經系統造成影響，1994年衛生福利部已公告禁用。

衛生福利部桃園醫院長鄭舜平表示，市面銷售的粽子多數使用五花肉或豬油拌炒，常油脂過多、纖維低、高熱量且口味偏重，加上端午節前後民眾往往都以粽子果腹，餐餐單吃粽子而忘記其他種類食物的攝取，導致飲食不均衡且容易有過量及腸胃道問題情形發生。

在地食材 纖維量高

部桃營養科營養師洪凱婷指出，院方推出運用在地食材「低油、低鹽、低熱量、高纖」的三低一高健康粽「紅藜雞肉粽」，以低脂去皮的雞腿肉取代傳統五花肉、鹹蛋黃，米飯直接使用餡料的滷汁拌均，不經油炒步驟，粽子的全榖雜糧類以桃園農特產大溪紅藜、八德區八三么米取代部分的糯米，增加了膳食纖維攝取。

營養科營養師吳宛蔚也說明，市售粽子1顆中型粽的熱量大約相當於1碗半的飯量，往往2至3顆粽子熱量就破千，因此份量上的選擇相對的重要。
